Greek salad (horiatiki)

Crisp vegetables, briny feta, and a simple olive oil–lemon dressing.

Ingredients

  • 2 cucumbers (chunked)
  • 4 ripe tomatoes (wedges)
  • 1 green bell pepper (large chunks)
  • 1/2 red onion (thin slices)
  • 200 g feta (block or thick slices)
  • 1/2 cup Kalamata olives
  • 3 tbsp extra-virgin olive oil
  • 1 tbsp red wine vinegar
  • 1 tsp dried oregano

Steps

  1. Combine cucumber, tomato, bell pepper, and onion in a large bowl.
  2. Whisk olive oil, vinegar, oregano, salt, and pepper; toss with the vegetables.
  3. Top with feta and olives; drizzle a little more oil if you like.
