Greek salad (horiatiki)
Crisp vegetables, briny feta, and a simple olive oil–lemon dressing.
Ingredients
- 2 cucumbers (chunked)
- 4 ripe tomatoes (wedges)
- 1 green bell pepper (large chunks)
- 1/2 red onion (thin slices)
- 200 g feta (block or thick slices)
- 1/2 cup Kalamata olives
- 3 tbsp extra-virgin olive oil
- 1 tbsp red wine vinegar
- 1 tsp dried oregano
Steps
- Combine cucumber, tomato, bell pepper, and onion in a large bowl.
- Whisk olive oil, vinegar, oregano, salt, and pepper; toss with the vegetables.
- Top with feta and olives; drizzle a little more oil if you like.
