Bring a little taste of France into your kitchen with this classic homemade crêpe recipe. Light, delicate, and wonderfully versatile, these crêpes are perfect with jam, fruit, chocolate spread, or simply a sprinkle of sugar.

Ingredients

  • 500 g flour
  • 1 L milk (2% or 4%)
  • 4 eggs
  • 100g granulated sugar
  • 150 ml water
  • 1 tbsp vanilla extract (Optional)
  • 75 ml beer (Optional)

Steps

  1. Start by melting the butter in a small saucepan or in the microwave. Once melted, set it aside for a few minutes so it can cool slightly before adding it to the batter.
  2. In a large mixing bowl, combine the flour and sugar. Crack in the eggs and begin whisking slowly, starting from the center and working outward. This helps the eggs incorporate smoothly into the dry ingredients.
  3. Next, gradually pour in the water, followed by the milk, whisking continuously as you go. Adding the liquid little by little helps prevent lumps and creates a smoother batter. Keep whisking until the mixture becomes light and fluid.
  4. Pour in the melted butter and mix well until the batter is silky and completely smooth. At this stage, the batter should be thin enough to spread easily in the pan.
  5. For the best texture, let the batter rest for about 2 to 4 hours if possible. This resting time allows the flour to fully absorb the liquid and helps the batter thicken slightly, resulting in softer, more tender crêpes.
  6. When you’re ready to cook, heat a nonstick frying pan or crêpe pan over medium heat. Lightly grease the surface with a little butter or oil. Pour in a small ladle of batter, then immediately swirl the pan so the batter spreads into a thin, even layer.
  7. Cook for about 1 to 2 minutes, or until the edges begin to lift and the underside turns lightly golden. Carefully flip the crêpe and cook the other side for another 30 seconds to 1 minute.
  8. Continue with the remaining batter, stacking the cooked crêpes on a plate as you go.
  9. Serve warm with your favorite toppings such as jam, sugar, Nutella, fresh fruit, honey, or a squeeze of lemon juice.
